
Ophir's Wines2005 SyrahCharacteristic Syrah flavors of blackberries and ripe plums made more complex by blending with 7% Petite Sirah. Smooth and elegant texture, baking spice and black pepper aroma, long finish. Grapes: 93% Syrah; 7% Petite Sirah 300 cases produced Spanish Corral RedSpanish Corral Red is 80% Syrah and 20% Mourvedre all from Gold Blossom Vineyard. The grapes were hand picked and fermented in small lots which were punched down three times a day for maximum color and flavor extraction. After pressing, the wine was moved to stainless steel tanks to start malolactic fermentation and to remove suspended solids in the wine. The wine was than transferred to French and Hungarian oak barrels where it aged for 18 months before bottling. It is a Cotes du Rhone style red with red raspberry and red cherry flavors, nice acidity and mild tannins. Alcohol is 13.9%. It goes well with salmon, pork and hamburgers. produced. 2006 Oui © RoséOur 2006 Oui is a departure from our usual blend of Rhône reds. This year it is a dry rosé made from fully ripe 100% Grenache grapes. It's a delicate salmon-pink in color, with vibrant strawberry and plum flavors, set off by a bit of spice (is it ginger?) in the nose. Sufficiently complex and elegant in flavor and style to impress rosé skeptics, a simple pleasure for the rest of us. Grapes: Grenache 100% 79
